Mexican tortilla lasagna recipe

This is great lasagna recipe that can be ready start to finish in under half an hour. The secret here is using ready made or bought flour tortillas instead of pasta noodles. The texture is surprisingly similar after you cook the lasagna; and tortilla casseroles are a real part of the Mexican cooking tradition.

This sneaky lasagna will taste great, and can be heated as well in the microwave as in the oven. Serve with a salad for a great hearty Mexican inspired meal.

Mexican tortilla lasagna

1 package flour tortillas

1 pound homemade chorizo sausage (see link below for instructions on how to make this) you can alternatively use whatever you normally use as a meat for taco filling.

About 2 cups of any ready made tomato sauce.

½ lb of grated mozzarella cheese.

Fry the chorizo sausage or taco meat, and when browned, add your tomato sauce. Let the sauce warm for a minute and turn off the heat.

Get a microwave safe square shaped dish. You want the size to be about the shape of four good servings of lasagna. It doesn't matter too much though.

Cut all the tortilla’s into squares shapes that will fit well to make layers within the shape of your lasagna dish.

Add a small amount of the tomato sauce mixture to the bottom, and then add your first layer of tortillas to completely cover the bottom of the dish. Add another layer of meat sauce and top again with tortillas Continue in this manner until you’ve used up all the tortillas.

Try to match the sauce used to the number of tortilla layers you have, and save a bit to spread out over the top.

After you’ve got the top covered in meat sauce, cover with cheese and then microwave on high until the cheese is all melted and bubbly, about 5-10 minutes.

That’s it, an easy weeknight meal. You’ll be surprised at how great this tastes, and how similar the texture of the tortillas will be to lasagna noodles.

This is a variation on a traditional Mexican tortilla casserole, but the technique will work well for any lasagna recipe…in about a quarter the time spent in the kitchen!

You’ll love this easy Mexican inspired lasagna and will appreciate how easy and quick it is to prepare. This is not really supposed to be a substitute for authentic lasagna (which is pretty close to perfect on its own!)

I really like it beacause it gives me a lasagna fix when I'm craving it - but I can have it made and on the table in just a few minutes!

Hola! I was just wondering if you mean regular (huntz or heinz) tomato sauce or tomato picante sauce (like pace)?

I mean like a very basic (non Herby tasting) tomato sauce that you might use for a simple pasta. Anything like that will work well.
