A 3 ingredient recipe for the best breakfast burrito you've ever had!

Sometimes the easiest recipes truly produce the tastiest meals. Great chefs know that food doesn't have to complicated, and often, that the fewer ingredients you add, the better something will taste. When something is perfect, you've got nothing to gain by adding more and more and more!

A perfect example is these incredibly easy three ingredient breakfast burritos. Our restaurant has sold literally thousands of these, and customers always rave at how great they are. Keep it fresh, and use good quality ingredients, and your food will taste fantastic.

Breakfast Burritos

Multiply recipe as needed. Two burritos provide a great filling breakfast or brunch for one person.

  1. Two four tortillas.Freshly made is best, and they're really easy to make too, but if you don't feel inclined, just buy any old flour tortillas and it will still taste great.
  2. Three eggs

  3. A sprinkling of good cheddar cheese

That's it.

Whisk the eggs in a bowl and add a good pinch of salt.

Warm your tortillas on a plate in the microwave for about ten seconds.

Add a sprinkling of good cheddar cheese down the center of each open flour tortilla. You want to use a good cheddar, but not one that is extremely sharp, as if it's too sharp, it will overwhelm the taste balance. Don't get carried away and add too much cheese either. Sometimes less is more. About three tablespoons worth of cheese should be plenty for two burritos.

Add a little oil to a non stick fry pan, and when it's hot enough (a drop of beaten egg in the oil begins to cook up immediately) then add all of the beaten eggs into the center of the hot oil puddle.

Wait a minute before you start scrambling away, when you can see that the bottom has started to firm up, then start stirring the eggs. Take them off the heat a little bit before they look done, as they will continue to set from their own residual heat.

Slide the eggs directly from the pan onto the tortillas, and roll them up.

That's it. Three ingredients and these breakfast burritos are perfect. You could easily add more. Most recipes will have you add beans, and sour cream and sausage and bacon and asparagus...and all these recipes will probably taste pretty good too, but these easy three ingredient burritos are about as good as it gets, and adding anything else starts too detract from perfection!

These are perfect enjoyed with a fresh tomato salsa, or your favorite Tabasco style hot sauce.
